Unit #1 of kiji hub, which records the mixing process at bakeries, is now running at a bakery in Kanagawa, Japan. The product we have been building is finally at work in a real bakery kitchen, recording data as the dough is mixed.
What kiji hub does
A small device fitted to the mixer records each mix automatically, while the baker enters the mixing conditions on a smartphone.
- Record: the mixer's power and speed, video and sound from the bowl, and the room's temperature and humidity
- Enter: recipe and weights, flour and water temperatures, and how the dough turned out
- Look back: browse the records as lists and graphs, and play back the video and sound
What's next
"What was different about today's dough?" Mixing has long relied on the baker's feel; kiji hub aims to let bakers look back on it in numbers. As unit #1 runs in a real bakery, we will keep making kiji hub easier to use.
We are also developing automatic mixing control. Stay tuned!
